Berkel slicer model 20 was built simultaneously to the model 8H-21, 1st series.
It is considered the technological jewel of Berkel production, so to gain the appellation of “Berkel’s Rolex”.
The slicing synchronism has been inspired by the previous models 1 – 2 – R and is located in the front of the cart instead of being in the back side, fitted by an endless screw placed under the same cart.
Moreover, the comb is fitted on the staging which is inserted in the endless screw.
The staging shifts next to the cart in the front side, towards the blade.
The vice is inserted on the shifting cart and is hitched to the staging supporting the comb.
This device allows an exceptional and unique slicing!!!
The closed and smooth flywheel puts a gearing system into action located under the base. It moves both the blade, by means of a chain, and the shifting cart, by means of two connected rods.
The cart shifts on wheels driven by a rail laying on the base.
The connecting rod that gives the movement to the cart is synchronized with a cam-lever located under the cart.
The whole mechanism is connected to the cog-wheel through a rod putting the endless screw into action, where the staging, supporting the comb, is inserted and where the vice generating the slicing is fitted.
The slice adjustment clock has an arch shape. Inside of it there is a cam connected to the cog-wheel that defines the slice thickness. There is a crank on it that, when is moved on the right or left, shifts the vice consequently, as you like.
The hub supporting the blade is fixed to the shoulder, which is flat outside with a wing shaped arch. This allows to lengthen an opal glass top tray, so you can manage more laying surface.
The sharpener is inside a painted cap; a lever acts on a cam moving the two sharpening grindstones.

In the same philosophy we carry out decorations by hand without the use of an airbrush and issue the “Certificate of Authenticity”, guaranteeing excellent operation for 5 years after delivery.
